Marinated fetta is seen as a specialty food and tends to command a high price – here you can make it yourself using some plain Greek fetta – delish!
Marinated Fetta
Fetta cheese in an olive oil and herb marinade
Ingredients
- 300 grams Greek feta cheese (or Bulgarian)
- 2 bay leaves
- 2 teaspoons dried oregano
- 2 teaspoons dried-thyme
- 2 teaspoons dried rosemary
- 5 cloves garlic (chopped)
- 200 mls olive oil (to fill jar)
Instructions
- Sterilise a 1 litre jar by boiling in water on the stove.
- Chop fetta into strips or cubes and place in jar. There should be enough room to add the other ingredients and gently shake the jar.300 grams Greek feta cheese

- Leave in a cool place (not refrigerated) for one week to ten days.
