Tabbouleh
Also called tabouli, this salad requires a bit of preparation, but it is definitely worth it! A good tabbouleh looks like the photo here, with parsley as the hero ingredient. While you might cut corners to serve it with a weeknight family meal, the ingredients should all be chopped quite finely to do justice to this beautiful salad.

A parsley, tomato and cracked wheat salad
Ingredients
Salad
- 1 cup fine bulgur (cracked wheat)
- 5 large tomatoes
- 1 large green capsicum
- 1 Lebanese cucumber
- 1 onion
- 4 bunches fresh parsley (flat leaf – up to 6 bunches if small)
Dressing
- 1½ tablespoons lemon juice
- 2 teaspoons cooking salt
- 2 tablespoons olive oil
- ½ teaspoon chilli flakes
Instructions
- Wash cracked wheat and drain by squeezing water out with hands.1 cup fine bulgur
- Remove skin from tomatoes by scalding in hot water (optional).5 large tomatoes
- Chop tomatoes, capsicum, cucumber, onion and parsley very finely. Mix all chopped ingredients with cracked wheat.1 large green capsicum, 1 Lebanese cucumber, 1 onion, 4 bunches fresh parsley
- Combine most of the lemon juice, salt, olive oil and chilli.1½ tablespoons lemon juice, 2 teaspoons cooking salt, 2 tablespoons olive oil, ½ teaspoon chilli flakes
- Toss with the chopped salad.
- Add lemon juice and salt to taste.
Notes
Keep in mind that once the dressing is added the volume reduces so make sure you make plenty!
You can also serve a large bowl of tabbouleh as a meal.
