Leeks with Rice in Oil
This dish is commonly called a pirasa from the Greek word for leek which is “praso”. Cooking with leeks is a specialty of Albanian Turks in particular – they are are known for their delicious dishes featuring leeks.
Leeks with Rice in Oil
Leeks and carrots with rice as a side dish
Ingredients
- 2 kilograms leeks
- 250 mls olive oil
- 2 large carrots
- 100 grams short grain rice
- 250 mls water
- 40 mls lemon juice
- 1 teaspoon sugar
- ½ teaspoon cooking salt
Instructions
- Cut the leeks into 3cm pieces and the carrots into 2cm pieces.2 kilograms leeks, 2 large carrots
- Heat the oil in a saucepan, add the leeks and carrots. Shake the saucepan occasionally.250 mls olive oil
- Add water, sugar, salt and lemon juice, and sprinkle the washed and drained rice over the leeks. Do not mix.100 grams short grain rice, 250 mls water, 40 mls lemon juice, 1 teaspoon sugar, ½ teaspoon cooking salt
- Close the lid and simmer on low heat for 25 minutes.
Notes
If you choose not to wash the rice, add an extra 60mls of water.
