Cajun Potatoes
Mary’s original recipe used Cajun seasoning but you can make this dish with other prepared combinations too. Think, Moroccan, Portuguese or Peri Peri.
Cajun Potatoes
Oven roasted potatoes with Cajun seasoning
Ingredients
- 2 kilograms potatoes (red potatoes look great)
- 125 grams butter
- 125 mls olive oil
- 125 mls water
- 2 teaspoons Cajun seasoning
- 2 teaspoons dried oregano
- 1 teaspoon chilli flakes
- ½ teaspoon cooking salt
- 1 teaspoon paprika
Instructions
- Cut potatoes into fairly uniform sized wedges. Mix together all other ingredients, and pour over potatoes.2 kilograms potatoes, 125 grams butter, 125 mls olive oil, 125 mls water, 2 teaspoons Cajun seasoning, 2 teaspoons dried oregano, 1 teaspoon chilli flakes, ½ teaspoon cooking salt, 1 teaspoon paprika
- Optionally par boil the potatoes – if you par boil, cook only for a few minutes and reduce the cooking time to 30-40 minutes total.
- Cover with aluminium foil and bake in a moderate oven (180°C or 160°C fan forced) for approximately 45 minutes. Remove foil and cook uncovered for a further 15-20 minutes.
