These brownies often made their way to our place as kids – made lovingly by one of our dear cousins.

Ingredients
- 60 grams cooking chocolate (Nestle’ Plaistowe)
- 75 grams unsalted butter
- 120 grams walnuts (chopped)
- 2 eggs
- 225 grams sugar
- 1½ teaspoons vanilla essence
- 90 grams plain flour
- ½ teaspoon baking powder
- 1 pinch salt
Instructions
- Preheat oven to 160°C and prepare a 20cm square baking tin by lining with baking paper.
- Chop up the chocolate and heat together with unsalted butter, on low power in the microwave, until melted. Stir and set aside to cool.60 grams cooking chocolate, 75 grams unsalted butter
- Chop walnuts into small pieces and set aside.120 grams walnuts
- Beat together eggs, sugar and vanilla until light and fluffy.2 eggs, 225 grams sugar, 1½ teaspoons vanilla essence
- Stir through the cooled chocolate and butter mixture.
- Sift together the flour, baking powder and salt, then combine with the mixture using a wooden spoon.90 grams plain flour, ½ teaspoon baking powder, 1 pinch salt
- Stir in the chopped walnuts.
- Spread mixture in the prepared baking tin and bake for 30-35 minutes.
- A dull crust should form. Check in the middle with a toothpick to make sure it is just a little gooey inside.
- Allow to cool and cut into squares. The surface will crack naturally.
Notes
If you can’t get unsweetened chocolate, use a mixture of 60 grams cocoa powder with 5 tablespoons water and cook to a cream. Also increase the quantity of the butter to 85 grams.
