Anoushabour
Anoushabour, although more like a pudding, means sweet soup. It is the Armenian New Year’s pudding, which, on large plates may be decorated with cinnamon with wording such as “Happy New Year”, “Merry Christmas”, “January 6”, or the new year “2021”. In small individual dishes just sprinkle a little cinnamon on top.
Anoushabour may be prepared richly with various dried fruits, or simply with just sultanas, according to your taste. The traditional Christmas Eve dinner is served on the 5th January, when Anoushabour is a must as dessert.
Anoushabour
A fruity pearl barley pudding served at New Year
Ingredients
- 500 grams pearl barley
- 320 grams sugar
- 320 grams sultanas
- 320 grams dried apricots
- 1 teaspoon rose water (optional)
Decoration
- 1 tablespoon cinnamon
- 125 grams blanched almonds (whole)
- 50 grams hazelnuts (unsalted, natural, whole)
- 250 grams walnuts (unsalted, natural)
- 250 grams macadamia nuts (unsalted, natural, whole)
- dried fruit (optional)
- pine nuts (optional)
Instructions
- Cut dried apricots into about 6-8 pieces each, so that they are a similar size to the sultanas.320 grams dried apricots
- Wash and drain the pearl barley, then bring to a boil with around 5 cm of cold water. Reduce heat and simmer until grains are well cooked, adding hot water as you go. They should not be firm. Note: be careful adding too much water. After the next fruit is added in the next step there should be around ½ cm of water above the grains and fruit.500 grams pearl barley
- Add sugar and dried fruits and mix well. Cook for a few more minutes then add the rose water essence (to taste).320 grams sugar, 320 grams sultanas, 1 teaspoon rose water
- Pour the anoushabour into the serving dish or dishes, and allow to cool for 30-60 minutes, so that it is just setting. Decorate with nuts, dried fruit and cinnamon. - For the centrepiece of your New Year’s or Christmas dinner table, pour in a large dish and decorate. Any remaining anoushabour can be filled in individual dishes, sprinkled with a little cinnamon, and decorated as you wish.
